It’s Fall Ya’ll!! I stepped into Trader Joe’s the other day and it was like walking into a fall festival! They have gone Pumpkin crazy! Pumpkin spice flavored everything! Cereals, pasta, coffee, cookies, bagels- I think you get the idea!
They had something I’ve never seen before in stores. Pumpkin Spiced Almond Milk! It’s so great to see more and more vegan products on the shelves. Trader Joe’s does a great job on their vegan products. It’s one of the reasons it’s one of my favorite stores.
I came home and wondered why haven’t I thought of making it myself before? I occasionally make homemade almond milk. It is seriously the best. It beats the store bought versions hands down, but we drink so much of it in our house, that I do buy the shelf stable or refrigerated brands often. Nothing wrong with it, but homemade is always better!
Here are 2 ways to make it yourself. From scratch or quicker version.

Make your own homemade almond milk. Great recipe from Oh She Glows here. Just requires a little planning as you need to soak your almonds overnight.
Add in your puréed pumpkin, spices, vanilla and sweetener of choice.
Enjoy in tea, coffee or on its own.
Store bought almond milk ( I used vanilla almond milk or any plant-based milk will do) blended with the remaining ingredients. That’s all there is to it. This recipe won’t be as creamy as the homemade version, but still so good.
Visit your local Trader Joe’s and buy a carton!
I then began thinking of all the possibilities of recipes with this fabulous creation. Smoothies, ice cream, oatmeal or porridge.
Pumpkin Spice Almond Milk
Omg this turned out fabulous!
- ½ cup-1 cup Almond milk
- ½ cup pumpkin puree
- Vanilla powder or extract
- Cinnamon, nutmeg and/or pumpkin pie spice
- Sweetener of choice ( i used stevia, but maple syrup, agave or blend soaked dates into your mixture)
- Add all ingredients together and blend. Pour and enjoy.
- Keep refridgerated in sealed mason jar.
Pumpkin Nice Cream or Smoothie
Just blend 2 frozen bananas, 1/2 cup pumpkin purée, vanilla, spices, sweetener and splash of almond milk if needed. I use a food processor for my nice cream so it will stay thick. A blender or processor will do just fine, just don’t over-blend. You want this like soft serve! For a smoothie add 1/2 cup almond milk and ice to above ingredients.
