I don’t know about you but I love ice cream anytime of year, but especially summer. Summer is here and I see advertisements of all the summery flavors at ice cream parlors and yogurt shops. Being vegan has its challenges of finding dairy free yummy soft serve, at least in my city. The vegan movement is growing and so are the products ( i.e. Ben Jerry’s non dairy ice cream) so hopefully one day soon!
I always make my banana nice cream and sometimes venture into some different flavors like chocolate or strawberry, but not much beyond that. So I set out to create a perfect summer flavor for myself.
Enter the Key lime! I love the key lime flavor and used to love key lime pie. I thought it would make the perfect summer flavor.
Just like most nice cream recipes this one is super simple and will keep you wanting more. And of course the bonus is you can eat as much as you like because it’s so darn healthy & cheap!
Just blend your frozen bananas with the juice of key limes if you can find or regular limes. A little lime zest and some sweetener of choice and bam you have the perfect key lime dessert. Top with shredded coconut for a little something extra. You could make this a smoothie as well. Just blend the bananas, lime juice, zest then add some zuchinni or apple (green is best) and ice. The apple or zuchinni will add some nutrition and bulk up your smoothie without loading you down.

- 2 Frozen bananas
- Juice of 2-3 key limes - adjust to taste
- Zest of one key lime
- Stevia or sweetener of choice to taste
- Optional - ½ tsp vanilla or coconut extract
- Blend frozen bananas till creamy
- Add in juice, zest and sweetener blend till creamy
